Courgette and lemons

DSC_2776-2OK here is a simple idea I tried this week.

We had a fair few courgettes from the garden. I washed them and sliced them into rounds and gently stewed them in a non stick pan, with a good glug of olive oil. I laid on top of the courgette, slices of (washed) lemons and sea salt. I turned them regularly and put a lid on the pan towards the end, allowing steam to further soften them.
